The Food Safety Danger Zone and How to Avoid It

The food safety danger zone is when food temperatures get between 41 and 135 degrees, with the most rapid bacterial growth occurring between 70 and 125 degrees. The longer your food is in this temperature range, the higher its chances of spoiling due to bacterial growth. Food in this range must be able to enter the proper temperature zone within the span of two hours; if your kitchen is above 90 degrees, however, your food should not be in the danger zone for more than an hour. That’s why a balance of temperatures is important to prevent food spoilage.
