Cleaning and Maintaining a Commercial Range: A Quick Guide

The range is the heart of any commercial kitchen operation. As with most pieces of equipment used to prepare and cook dishes and store perishable and non-perishable items, it needs to be cleaned and maintained properly. Cleaning the Burners and Graters

The burners and graters of your commercial kitchen range tend to accumulate grease and grime the most. Before you begin cleaning, make sure to turn off the equipment until it is cool to the touch. Next, carefully lift up and remove the burner covers and graters. Submerge them in a sink or a large container filled with hot, soapy water for at least half an hour to remove the stubborn grease and food residue. Scrub the burner covers and graters to remove the remaining grime, then rinse thoroughly and air dry until they’re ready to be placed back on the range. Don’t forget to clean the burner ports before doing so.

Cleaning the Oven Interior

The inside of your commercial kitchen range’s oven must be cleaned as well to prevent food residue from burning and producing a foul smell. First, take out the oven racks, setting them aside for cleaning. Once the oven is empty, use a non-abrasive cleaner, or mix baking soda and water to clean the interior, paying particular attention to corners and crevices. Wipe the cleaning residue clean. Then, scrub the oven racks or soak them in soapy water. Rinse thoroughly and let them air dry before putting them back inside the oven.

If the unit has a ventilation system, clean or replace the filters according to manufacturer specifications.
